1. How have people's eating habits changed over the last few decades?

Over the last few decades, people’s eating habits have become much more rushed and convenience-oriented. Instead of sitting down for regular family meals, many people grab ready-made snacks or order takeaway on their phones. On the plus side, there’s more awareness of nutrition and special diets, but overall, highly processed food has crept into everyday life in a way that would’ve been unthinkable in the past.

2. Why do you think fast food has become so popular around the world?

Fast food’s popularity mainly comes down to convenience and clever marketing. It’s quick, predictable, and relatively cheap, which really appeals to busy urban lifestyles. On top of that, global chains have standardised their menus and created a kind of familiar brand culture, so people feel they know exactly what they’re getting, whether they’re in New York, Nairobi, or New Delhi.

3. What can be done to encourage people to eat more healthily?

I think you need a combination of education, incentives, and regulation. Schools and media campaigns can raise awareness, but unless healthy food is affordable and accessible, people won’t change their habits. Governments could subsidise fruit and vegetables, restrict aggressive junk-food advertising to children, and require clearer food labelling, while workplaces might provide healthier canteen options to make the better choice the easier choice.

4. Do you think traditional home cooking is becoming less common?

To some extent, yes, traditional home cooking is under threat because people are time-poor and often lack basic cooking skills. That said, it hasn’t disappeared; it’s just being squeezed into weekends, festivals, or special occasions. Interestingly, there’s also a counter-trend, with cooking shows and social media reviving old recipes, so traditional dishes are surviving, but in a more occasional, symbolic role.
